You use milk in your stuffing? how much? I always made a stock of onions and celery and h20 to about a good cup-then added my cut onions and cut celery and mixed it in with the stuffing-and butter stuffed in with every other cup full of stuffing..- (just washed out the bird, and will do it again in the morning then stuff it..  I did the toasted bread and tossed it with salt and pepper last night let to dry--a bit--made a pumpkin pie that looks real stupid-it fell-then Tom picked at the crust and it looks even more stupid. (thank god for cool whip!!!!! thanks for the help Tom........... :-( --- there are only 4 of us..  Or I would try the scalloped corn.. maybe do that with the left overs........ Even got the potatoes pealed and waiting in their water and have them parked in the garage. Table set with sterling silver (my moms) So the table looks festive..I do everything from scratch. WISH I HAD TWO OVENS!!!!!!!! Love to cook.. THis is the first time in over 3 years that I can be a MOM, and cook-as been to ill-------- But I have a forth member this year.. Well I think I win the prize this year for being the laziest Thanksgiving dinner cook in town or amongst the ostomates. There are two of us who live at to the Vintage apartments in Spokane such a fancy name for a weird place. The two of us both crochet together quite a lot and we found out that neither one of us were going to go anywhere for Thanksgiving this year. As for me and my children are on the west coast of the state of Washington and I'm on the east side about as close to Idaho as you can get. So there is about 400 miles between us this year. So Bee and I decided that we would celebrate Thanksgiving together. I went down to the Rosauers grocery store which is the one that I favor in our area and I bought their Thanksgiving kit. It contains a 12 pound fully cooked turkey it has the mashed potatoes it has the brown gravy it has rolls it has cranberry sauce it has stuffing in the whole nine yards. All I have to do tomorrow is put it in the oven and let it heat it's all fully cooked so all I have to do is heat it up in the oven and serve it. And I think that about Takes the Cake for lazy. But I just didn't have the umph or the stamina this year to cook the whole bloomin thing myself. I admit that that doesn't have some of the traditional things that I look forward to but I do plan to do a little doctoring up with the things that came and think I'll probably come in with a pretty good match. Wishing all of you out there a very Happy Thanksgiving even those of you who are up in Canada and other places who don't celebrate Thanksgiving with us I still hope you have a lovely day and I'll be back to you if things go and let you know what's happening. My stuffing is the same as my mother's stuffing was, Marcie. Ma didn't really teach me how to make it. I just watched her, year after year. I did get to mix it all together - that's the best part anyway!!! Bread, onions, celery, ground sage and milk. Oh, and REAL butter to cook the onions and celery in - that's it. Super simple!!! Here's the "recipe": Day-old bread, cubed (preferably not fresh bread - day-old is better) Onions and celery - diced up pretty small - not chunks Butter (REAL butter) - to saute the onions and celery. When the onions and celery are cooked through (and kind of golden brown), add them to a big bowl of diced bread cubes. Add in a splash of milk (as much or as little as you want, depending on how wet you want your stuffing). Sprinkle a generous amount of ground sage on top. Mix well with your hands. If it's too dry for your liking, add more milk. If it's too wet, add more cubed bread. When it tastes right (add the sage until it tastes right to you), put it in a Pam-sprayed casserole dish, cover it with Reynolds Wrap and bake it at 350 for at least 45 minutes, sometimes an hour. Uncover it for the last 15 minutes if you like a browned top. Dig in and eat! (You can stuff the bird or not - depends on what you want to do. Doesn't matter either way.) We like lots of onion and celery, so I use a whole sleeve of celery and three or four onions. The best part of this "recipe" is that you can ad lib it, and it doesn't matter because it will always turn out PERFECTLY!!! There is no way to mess it up!!!! I've tried - and it can't be done. So however you do it, it's gonna be GREAT!!!! Just trust me and go with what you feel is the right quantity of each ingredient. That's the way all great chefs cook anyway! They don't use a "recipe"!!!!! Again this year, I'm using 6 loaves of square sandwich bread to make my stuffing. My husband cut up all the celery and onions, so that's already done. I have a gallon of whole milk in the fridge just waiting to be used, and a fresh jar of ground sage. Yes, that's a HUGE quantity of bread -- but we eat more stuffing than we do anything else. I fully expect it will be gone by Sunday - if not before. We eat it hot or cold out of hand. Will probably have three or four of my biggest casserole dishes FULL of stuffing to bake. Good thing I have two ovens!!!!! That's all there is to it, Marcie. It's part of my K.I.S.S. formula - Keep It Simple, Stupid. The older I get, the easier my life has become. I've learned the tricks to doing hard things the lazy man's way and I still get the same results with only a third of the effort. Life doesn't have to be difficult. I've broken it down into little bite-size pieces and am having a ball!!! Now that my rectal cancer is gone, I'm thankful that Almighty God has given me this second life, and I'm going to enjoy it!!! Laugh at least once a day!!! Barbara - You are NOT the laziest Thanksgiving dinner cook!!! I think you're the SMARTEST!!!! More than once I've thought about having the grocery store make our dinner fixings and deliver it. I specifically remember the year I was diagnosed with my rectal cancer. I just didn't feel up to going out for dinner and I sure wasn't in any shape to make it, so my husband (the darling that he is), thought of the big truckstop out on the west side of town. He called them and asked if he could get two Thanksgiving dinners to go and he explained why. They made us up two wonderful dinners - turkey, stuffing, mashed potatoes, gravy, corn, sweet potatoes, dinner roll AND the requisite pumpkin pie. It was really very good. We did the same thing the next year because I just wasn't up to cooking yet. But I've made dinner the last couple of years and it's been really good!!! You and Bee are going to have a really nice dinner without all the fuss. Very, very smart!!!! I actually kind of half-envy you for not having a big mess in your kitchen!!! Clean-up drives me crazy!!!! Happy Thanksgiving to you and Bee and everybody else on here!!! We've all come a long way!!!! We have a lot to be thankful for!!! I know I won't stuff myself tomorrow, but I'm sure not going to diet either. A bit of turkey, a lot of stuffing, cranberry jelly, a pile of sweet potatoes (with brown sugar and butter - no marshmallows) and maybe a dinner roll and I'll pretty much be done. My day of being more stuffed than the turkey are long over, but I do plan to eat a good dinner.
