Being someone who loves deals on produce, I got a 10lb bag of carrots for under $2... the problem is, I have no idea what to do with them! LOL Does anyone have any ideas? I'd normally add sliced carrots to salads and occasionally eat a whole one raw, but that'about it - most of the carrots we eat are frozen and come mixed with cauliflower and broccoli! Just your friendly neighborhood ostomate. Hi Eric, We eat a lot of carrots, raw and cooked. We like them roasted ( with other root vegis, or just by them selves). I wash them well( do not peel them anymore. I can't see the use), cut them into chunks and roast them HOT like 425 for a hour ...stir them occasionally. You can add all kinds of flavors to them, Mexican, middle Eastern, etc. I add them diced and microwaved to prepared tomato soup to boost nutrition. I don't eat them raw any more ..the chunks worry me. And, of course you can make carrot soup. There are recipes on line I believe. Get an immersion blender if you are into creamy soups. Mush safer and you do not have to put hot stuff in the blender and then scrape if off your ceiling later. Try roasting them with sweet potatoes and bell peppers and red onions( put the peppers in later.. they cook faster)... very pretty! Some people juice them. I love the juice, but do not do it myself. I think I have seen a recipe where after they are roasted they are drizzled with maple syrup. Since you are a Canadian this might be a national imperative. Plus your kids might eat more! My favorite carrot recipe is a traditional Jewish dish called tsimmes. It's usually carrots, sweet potatoes then variations on either raisins, pineapple, anything sweet you might have, cooked stovetop or oven and n orange juice and honey The recipes online that I've seen are very good. just looked that dish up online and boy it does look good, THINK Eric may have started a carrot revolution. ileostomy 31st August 1994 for Crohns Illona, That sounds really great!
