Try freezing your tofu!

One of the best tofu tricks I have is to buy either firm or extra firm tofu then freeze it before thawing and cooking. It changes the texture and gives it a more "meaty" bite - if you've ever wondered how restaurants get their tofu to "feel" like meat, that's what they're doing! 

Have you tried this?

To "quick thaw", I open the package and run the frozen block of tofu under hot water until all the ice is melted from the outside. Then I'll stick it in the microwave for maybe 10 minutes and then let it sit for another five.

Depending on what you're doing, this should be all the time you need before cooking it. But even if the center is still a little frozen, it'll melt when you move the tofu to a pan or whatever you plan to do :)

Most of the time, yes. It really depends on what I'm making and whether I'm marinating it before cooking it. 

I tend to always press my tofu regardless... Don't like it wet when I'm trying to stir fry 😂

I agree. Press before or after freezing? I used to marinate before baking, recently I've been baking with just olive oil,  sprinkle of tamari, for 30 min on 400, then tossing in marinade. It's been yummy.

It's the water in the tofu that causes the magic to happen. I freeze the tofu while it's in the package, and press it after it's thawed. 

Baked tofu is so nice. We've been steaming our tofu lately, which also gives it a totally different texture.
