So I picked up a paella "kit" from Amazon a little while back, but never had a chance to make any. It came with the spices, dried pepper, the rice, and a pan to cook it all in 😃 Due to the crazy high cost of fresh produce, I improvised with some frozen veg and used tofu as the protein. Needless to say, we'll be making more of this 100%. No issues at all digesting it. Any other paella lovers? Just your friendly neighborhood ostomate. I've never had Paella before but I have wanted to try it. Was it really spicey. .scale of 1 to 5, 1 being taco seasoning spice 5 being spiciest? It looks so good & I find it interesting it came with a pan in the kit as well! I imagine a big cast iron pan would work well too. I make a Spanish rice style recipe with taco seasoning and a few other herbs & spices to give a bit of a kick, lol! I use shredded chicken or ground beef in it & veggies also. I cut peppers in half from top to bottom & stuff them with the mixture then cook what I'll eat of them for 2 meals in the oven and the rest go into the freezer. It makes a nice simple meal for those nights I'm not up to cooking. A salad or more veg on the side can be added. That's as close as I've gotten to Paella besides looking at the recipes for them. Lol! But it does look like a delicious one pan meal!! I like tofu & the idea of Tofu for the protein but do you not find it terribly expensive, more so then meat? Do you have a good burger recipe using tofu or a bean or legumes? Something that I can freeze in portions as well?? Don't mind my asking as I'm a little out of content here... but, did you by chance do something so I get a black screen here now?? After I mentioned it in another forum the next time I signed in my screen on this end was blackened. I'm so pleased with this dark screen as it means so much less eye strain & pain for me! This is the only area where the back ground does not turn black but that's fine, its down to a dull white-ish but the other parts of forums are black! Yaayyyyy!!! The included seasoning was NOT hot spicy, and my wife and I both commented that it didn't even need to be hot spicy to be good - it was just good :) I don't have a cast iron pan nearly as large as the included pan, but I think with a smaller quantity, it could work. One thing about this recipe is that it actually starts on the stove top and is quite liquidy at first. After that, it goes into the oven and much of the moisture evaporates, and you're left with what you see in the photo. Tofu has gone up considerably in the last year, but I think it's still quite reasonable compared to meat. For comparison, a pound of tofu is about $2 (Canadian). There are probably thousands of vegan burger recipes around, and you can use just about anything in them - I've never had a bad homemade vegan burger. The feature is still in testing as I'm not sure if I'll be using a different implementation or not, but the "dark mode" feature is here to stay. I think that it's set up to automatically switch to dark mode if your phone/browser is already set to dark theme mode, but you obviously have the option of switching it using the toggle if you like. Just your friendly neighborhood ostomate. Looks yummy, Eric. I love paella. It is so versatile, you can put just about anything in it, and you can kick up the spice a few notches if you want to. I just use a large frying pan to make it; I don’t have a special paella pan. I love the crust that forms on the bottom; it’s my favourite part. Thanks for the reminder - I think we’re due soon for a paella. Have you tried Okinomyaki? A Japanese dinner pancake that would be good as a vegan version, I think. Lots of cabbage, cheese - I always add potato - but it’s the sauce that really makes it fantastic. If you’re interested, I will send you a YouTube link. One of these days, I should try it, but on the less spicy side. Stella @veganostomy you will have to use an egg substitute as well, but you can add pretty much anything you want to “dress” it up. The key is the sauce! We never use store bought Okinomyaki sauce - it’s too easy to make our own. Equal parts of soy sauce, ketchup, and Worcestershire sauce. Really, the dish is just a carrier for the sauce!😆 And if that gets your mouth watering, let me tell you about my crunchy fried tofu with Korean gochujang sauce……..😋 Laurie Just a semicolon
