Late night snack – Oct 12, 2013 – Sandwiches and a salad.

Boy do I love food.  After five years of having Crohn’s-related pains from eating, I REALLY enjoy food now, more than ever!

I’ve been experimenting more with raw fruits and veg, legumes (red kidney beans and lentils), potatoes with their skins and salads. No issues, and my output is usually a medium consistency.

Tonight I made this “evening snack” which was simply amazing!

My deluxe sandwiches, which included:

  • Guacamole spread
  • romaine lettuce
  • tomato slices
  • mustard
  • tofu
  • homemade relish
  • Vegenaise
  • nutritional yeast
  • sriracha sauce
  • salt and pepper
  • All on some plain bread.

As well as a salad with:

  • Romaine lettuce
  • tomatoes
  • croutons (just really toasted plain bread)
  • nutritional yeast
  • olive oil
  • red wine vinegar
  • salt/pepper

And here are the nutritional totals for this meal.  I could have easily skipped one of the sandwiches, but I didn’t feel overly full even with two of them.

Good amount of calories, high-protein, lots of iron and zinc… a great meal for a healing body!

Always remember, that with an ileostomy, you must chew everything as good as possible to avoid blockages.
